Is there a document that lists the Pros and Cons of using GraphQL vs FQL. Maybe a feature comparison that would explain when its best to use one over the other.

As I know FQL can be regard as native language in operating Faunadb.
Graphql is built on top FQL, so they need to convert which mean the performance will have a very little down compare to FQL
